Eagles Rest Winery is a state of the art, gravity-fed winery located in Pokolbin in the Hunter Valley. The winery complex consists of a corten barrel-vaulted winery, a large gravel entertaining courtyard with timber pergola and a white limestone tower incorporating a cellar door ,commercial kitchen and associated landscaping.
The brief was developed with the wine maker to create a new winery which could maximise the quality of some of the oldest spring fed vines in the Hunter valley based on the gentle gravity-fed winemaking process. The north easterly sloping site allowed the five stepped and vaulted pavilions totalling 5000 square metres to be curved to the contours of the land and carefully separated from the public cellar door and courtyard.
